Yo Quiero Mexicano

Hello again all! Sorry it has been a little while since the last time I posted, I have been very busy with a lot of summer activities, events and such. Nothing says a good time and a good party like great food. Every summer thing I’ve gone too always has the same thing, hot dogs, hamburgers, macaroni or potato salad, watermelon, and so on. What a lot of these parties are missing is a little flair in the food, hence why I decided to take on today’s pin. This is a Mexican inspired dish that takes a new twist on the taco. It’s taco bake, similar to a taco lasagna dish.

Previously in all of the other pins I debunked I followed the directions or the recipe exactly and was really testing how well these directions work. This time, I have to admit I did veer away from the recipe a little so my outcome is not exactly what the outcome would be if you were to follow it to the tee.

When I found this recipe I was so excited because anything taco related is a big hit in my house. We love tacos, taco salad, taco dip, and now taco bake! This pin is linked to Modern Day Moms, where a ton of ideas and tips for parents and mothers are available. What makes this recipe so great is that it is so incredibly easy to make and it doesn’t take very long at all.

The list of ingredients include ground beef (or turkey, which ever you prefer), taco seasoning, large flour tortillas, Salsa Con Queso, and shredded cheese. All you have to do is brown the meat and add the taco seasoning, mix the meat with the queso and layer the meat and shredded cheese between flour tortillas. After that all you have to do is bake it for 15 or so minutes and then serve. Old El Paso also makes a taco bake kit in which is very similar and all you have to do is add the meat. I’ve tried both of these and for my family we found the kit was a little small. We would have liked more but there was not enough for seconds. That is why I took this pin on!

I used the large tortillas and lined each with a thin layer of queso instead of mixing it right in with the meat, then I added meat on top of that. Where I got a little creative was what else I put in the layers. In the bottom layer I added diced onions and tomatoes, topped with shredded cheese and went on to the next layer. In the second layer I had the queso, the meat, the shredded cheese, but I also put some taco sauce and salsa in it. The third layer was the same as the first layer except without the diced tomatoes. Not everyone in my house is a fan of tomatoes so I didn’t want to put too many in it. The final layer was not topped with another tortilla like the previous layers, so I only put queso, meat and cheese on it.

Once it was finished baking I topped it with shredded lettuce and diced tomatoes but I also put out hot sauce, taco sauce, and salsa to put on our individual portions. This was so incredibly delicious and was a huge hit at my house. It was cheesy and creamy and so easy to alter to our taste buds. The best part about this dish is that when I cut it and served it from the pan to the plate it didn’t fall apart so there was no mess at all! I thought for sure it would fall apart because of all of the cheese and sauce in it, but it didn’t, it held up. The was probably my favorite part of this dish besides the taste, because now I can bring it parties cut it into smaller snack sized portions and I know it will not fall apart every time someone tries to eat it.

This is one for the record books. I am giving this two huge thumbs up, even though I changed it a little. This pin is fully debunked and I suggest each and every one of you give it a try some time!
